Crunchy Granola Mom

I love granola. It is such a perfect breakfast. I used to make it all the time and my husband got tired of it. I stopped making it for a while, but recently I was craving some. So, I decided to make my favorite recipe. It is ever so slightly adapted from Skinny Bitch In The Kitch. I feel like it comes out perfectly every time, I also always seem to have all the ingredients which is a huge plus. You guessed it,  I am going to share my recipe for your enjoyment. I hope you are as successful as I have been.

Ingredients:

2 cups rolled oats (not instant) I usually buy mine in bulk at my local health food store
1 1/4 cup sliced almonds, I use whatever nuts I have in my house at the time
3/4 cup shredded coconut (I use unsweetened)
1/4 tsp salt
1/4 cup maple syrup
2 Tbsp rice syrup
2 Tbsp vegetable oil (I use safflower) plus more for greasing
1 cup dried fruit (I used half raisins half cranberries, you can use golden raisins, apricots, or whatever your heart desires)

Directions:

Preheat oven to 300 degrees

Arrange oats on a large rimmed baking sheet and bake for 15 minutes. I usually stir occasionally, sometimes I forget and they come out fine.

In a large bowl combine almonds, coconut, and salt.

In a small bowl whisk together maple syrup, rice syrup, and oil.

When the oats are done stir them in with the coconut mixture. Add the syrup mixture and stir until well coated.

Grease large rimmed baking sheet you used to heat the oats and spread the granola evenly on the sheet and bake for 20-25 minutes or until golden brown. I usually stick to 25 minutes. Stir in the dried fruit. 

Cool completely. The granola will look and feel wet until it is cooled, so be patient. 

Store in an airtight container.
